Cookie Shots
Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/2 cup vegetable shortening
- 1/2 cup granulated sugar
- 1/2 cup molasses
- 1 egg
- 1 cup White Candy Melts
- 3 cups vanilla ice cream
- 1/4 cup butterscotch topping
- 1/2 cup milk
- Bowl
- Sprinkles
- Whipped Cream
- Shot Glass Mould
Method
- Preheat the oven to 190°C. Grease each cavity of the shot glass mould
- In a small bowl, combine the flour, salt, ginger, cinnamon, nutmeg, and cloves
- In a small microwave-safe bowl, melt the shortening. Cool slightly
- Add the sugar, molasses, and egg to the shortening mixture, and mix well
- Add the dry ingredients and mix well to form a stiff dough
- Portion the dough into about 2cm sized balls and place one ball in each cavity of the shot glass mould (filling cavities about 1/2 full)
- Use the insert to firmly press the dough into the cavity and up the sides, pressing straight down and all the way to the bottom of the cavity. Leave the insert in place during baking
- Bake for 15-17 minutes or until the top edge of cookies is firm and dry. Cool in the mould for 10 minutes
- Then inserts from cavities; gently twist the insert to release the cookie. Cool completely on the cooling rack. Cookies will remain soft until completely cool
- Repeat with the remaining dough
- Once the cookies have cooled, melt the candy melts in the microwave at half (50%) power for 1 minute. Microwave in 30-second intervals at 50% power, stirring between each interval until melted
- Brush the insides of the cookie glasses with melted candy, covering the sides and bottom, sealing any cracks or holes
- Dip the rim of the cookie glass into melted candy, then into sprinkles. Allow the candy to set.
- Blend the ice cream, butterscotch, and milk in a blender until smooth and well combined
- Divide the mixture evenly among the cookie shot glasses
- Top with whipped cream and drizzle with butterscotch, if desired
